Biryani Voyage

What is Biryani? Anyone in South Asia will know and begin to share fabulous stories about some biryani experience. Hyberabad ka Biryani. Kolkata ka Biryani. Multiple places. Multiple Nuances. Multiple histories of food mixing and merging traditions and experiences, of culture of food and ingredients.

Why a Voyage? Because this series, Biryani Voyage, begins in the West (somewhere in Europe) and proposes to explore and expose nuances of cuisines (yes, plural mode) in South Asia, having Biryani as a trigger and taster to think about Food Systems and taste the possible futures of Culinary Cultures in a so called global planet screaming for locavore practice. The planet is in tension. Food is a terrain to think, test, taste what is, what could be, what should be, … Welcome to Biryani Voyage.

Now, what is Biryani? In your plate, a rice preparation with many things. In your souvenirs, many other things. So, conversations to set.

Prelude. You are in Roma (hey, all routes lead to Roma, no?) and are looking for a Biryani in this urbanity. Tough job. How come? This will be triggering our narrative and gustative inquiries.
